Banana Nut Bread Day!

It is obvious that I am not on top of my blogging, it has been awhile! I made this banana bread beginning of the year. I saw it on The Neelys and it looked awesome! And it is awesome!!! So this is a recipe to share. Enjoy!!

Momma Callie's Banana Nut Bread with Honey Butter

Ingredients

  • 1 stick butter, at room temperature, plus more for loaf pan
  • 1 1/2 cups all-purpose flour, plus more for pan
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 large very ripe bananas*
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3/4 cup chopped pecans
  • Honey Butter, for serving, recipe follows

Directions

Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
In a large bowl, whisk together the flour, baking soda, baking powder and salt.
In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling. Slice and serve with Honey Butter.
*Cook's Note: To ripen bananas quickly, put them into a paper bag and fold down the top. The bananas should ripen in 2 days.

Honey Butter:

  • 1 stick salted butter, softened
  • 2 tablespoons honey
Mix the butter and the honey together in a small bowl with a wooden spoon. Serve with the banana bread.
Yield: 1/2 cup

Trunk or Treat 2011











Our church is having a Trunk or Treat for the first time and these are ideas that I have come across while looking for ideas on the Charlie Brown The Great Pumpkin theme!! More to come on this!!!

Home made Ranch dressing

My husband loves ranch dressing and I want to try a recipe to make my own ranch. Will I save money making my own, and will he like the dressing? That I will have to get back to you on. I just came across this dressing and the reviews are pretty good so this seems to worth to share and I will try and give you my review!

1 cup buttermilk
1 cup mayonnaise
1/2 tsp garlic powder
1/4 Tbsp Kosher salt
2 tsp dried parsley
1/2 tsp onion powder (add more to taste if you think you need it but wait 24 hours before you add)
1/2 tsp MSG*
black pepper to taste
dash of Cholula or hot sauce of your choice

Whisk all together and let chill for half hour. Taste then and add any other seasonings in may need then.

The best cupcake frosting recipe!

So I am not a fan of icing! To sweet for me, when I was introduced to a cooked icing on my wedding day that our wedding cake lady specialized in... I fell in love!!! I have no idea if this how she made her icing, but it is so close. It has the sweetness from the real sugar vs confectioners sugar, and it is so creamy! Some said it almost tasted like a cool whip icing.

Perfect cupcake frosting and filling
3 Tablespoons flour
1/2 cup milk- I use whole milk
1/2 cup real butter
1/2 cup granulated sugar
1 teaspoon vanilla extract, or any other flavoing

Whick together the flour and milk in a saucepan over medium heat until it gets thickened. The recipe on the website says to put the mixture through a fine mesh strainer to get out the lumps, but I have not had any lumps the 3 times I have made this and they turned out ok. Put that mixture into a bowl and place in the fridge to cool, you don't want to use this warm. While that is cooling, beat together in a stand mixer the butter and sugar for a minuite. Make sure you are using the whisk attachment. Then add in your milk mixture and vanilla and beat together for a few minuites then scrape the sides.Then return to mix 7-8 min., and I had mine at a higher setting. Delicious!!!!!
